The texture of properly cooked pasta

Al dente is the Italian phrase used to describe the texture of pasta when it has been cooked for the proper length of time.

Literally meanin 'to the tooth', al dente pasta should be fully cooked and soft on the outside, but still with a slight resistance at its centre.

Cooking to the al dente level is purely a matter of timing and testing, with every kind of pasta cooking at different rates.
