Angelica



A medicinal and culinary herb

Angelica is a native European herb which grows in damp conditions such as river banks. Although largely used as a medicinal herb, it does have culinary uses.

The young leaves can be used in salads, soups or stir fries, the stem can be candied and used as a decoration / flavouring in desserts, while the seeds can be used as a spice. It is also used as a flavouring for some alcoholic drinks including gin and vermouth.
