A kind of rice commonly used in risotto
Arborio rice is a type of rice commonly used in risotto recipes. It can absorb over twice it's own volume in liquid while still retaining an al dente bite.
It is a fairly round and fat grain, with a high level of starch which is released during cooking, giving the creaminess characteristic of a real risotto.
Arborio is grown in the northern Italian regions of Lombardy and Piedmont.
Jamie advises to use normal thyme if you cannot get hold of lemon thyme
