Asparagus



'The First Taste of Summer'

British Asparagus is a great delicacy with a very short season covering a matter of weeks from late April, through May and into mid June.

Outside of these times, asparagus will generally be imported from far flung places, with Peruvian asparagus a common sight in supermarkets and greengrocers all year round.

Asparagus is good boiled, steamed, grilled or roasted, but the key thing is to make sure it's really fresh, as the natural sugars in the vegetable begin to degrade into starch almost as soon as the stalk is cut.

One of the best ways to get fresh asparagus, if you can't get it direct from the grower (for example at a farmers' market), is to buy local produce from a good greengrocer. Supermarket asparagus can of course be good, but will often have spent longer in transit or storage prior to sale.
