A mixture of water, salt and flavourings used in food preserving
Brine is basically a mixture of water and salt, and is used to preserve meat, fish or vegetables.
Flavourings such as spices can also be added to the brine, which will show through in the preserved result.
Brining food - the process of soaking it in brine - is an important part of preservation, especially in meat curing where it is widely used as a stage of making bacon and other cured pork and ham produce.
Brine will naturally add a salty taste to the foodstuff that is preserved in it, from feta to anchovies, but if the result is too salty, soaking the brined food in water or milk for a few minutes or more before using it can soften the effect.
