Brunoise



Finely diced vegetables

Brunoise is the cooking technique of chopping vegetables into an extremely fine dice of a couple of milimetres each side.

The vegetables chopped in this way are also refered to as a brunoise, and are usually sweated in butter to provide a basis for a soup or sauce, but can also be used raw as a garnish depending on the vegetable in question.
