Calamari



A common Mediterranean way of serving squid

Calamari is the well-known squid dish found in many parts of the Mediterranean. It is made by slicing the body part of the squid into rings, coating them in batter or breadcumbs, and then deep frying. It is typically served salted and with lemon wedges.

Done well, the squid is tender and satisfyingly fishy. Done badly, it's like eating a rubber band.

Fresh squid are essential for this recipe if you're to avoid the rubber band effect, as is very hot oil to cook them in the shortest possible time.

N.B. The 'calamari' name comes the word for squid or cuttlefish in Italian. Squid is also known by similar names in many other languages of the region. However, to British eaters, the word is generally only used when the squid is prepared as above.
