Cornish Sardines



Delicious fresh or preserved in salt

Cornish Sardines are not strictly sardines at all, but pilchards, a closely related fish of the same family. Pilchards however seem to have an image problem, and are much more easily marketed under the sardine 'brand'.

No matter, Cornish sardines are definitely a worthwhile fish whichever name you buy it under, delicious either barbecued from fresh or preserved by salting and pressing, a method that is centuries old.

These preserved fish stand comparison with salted anchovies, yet are much more difficult to find. You can visit a working salted pilchard producer and museum to the Cornish pilchard industry at The Pilchard Works in Newlyn, Cornwall.
