Dover Sole



King of the flatfish

Dover sole is a flatfish which many consider to be one of the finest available in British waters.

It gets its name not because the sea off Dover is particularly rich in the fish, but because in the past most of the sole used in London restaurants was landed at the port.

A single fish can grow up to 3kg or more, but more typical fish are around 800g to 800, which make a good individual serving.

In contrast to most fish, dover sole is not at its best when extremely fresh as the flesh can be rather tough - fish a couple of days old will be more tender and have a more developed flavour.

Lemon sole is a cheaper alternative, although the flavour of these fish is not as fine.
