The Italian take on an omelette

A frittata is an Italian egg dish with some similarities to an omelette. It is more robust though, and is expected to be more heavily cooked than the semi-solid omelette - it should be browned on both sides rather than folded.

Frittata will generally contain a vegetable filling such as sauteed onion, garlic and zucchini, and is often flavoured with freshly grated parmesan or other hard cheese such as pecorino.

It can be served as a starter with a salad, or in larger portions as a main, or even allowed to cool and eaten in slices as a snack.
