Haslet



A Lincolnshire delicacy

Haslet is a baked meat loaf from Lincolnshire. Traditionally made with spiced offal of the most offaly type (entrails and the like) from which it takes its name, it is now more often made from sausage meat (which may amount to much the same thing I suppose, depending on the source).

It's normally found thinly sliced in delis and delicounters countrywide, in its unsliced form it more closely resembles a terrine or a coarse, set pate.

Haslet is not made from offal. Its made from minced port, stale bread, onion and sage. The mixture is wrapped in caul fat (which maybe where the idea its made from offal comes from)and then baked. So far as I know or can tell that's the way its always been made. We regularly had it for summer tea when we visited my Aunt and Uncle in Wisbech, where it was made locally, and it was delicious.
