Hogget



Meat from sheep between one and two years old

Hogget is the term used to describe the meat from sheep that are between a year and two years old.

Younger meat than this is classed as lamb, while older is described as mutton.

As you'd expect from its position in the spectrum between lamb and mutton, it is more flavoursome than lamb but also potentially tougher. The extra fat laid down compared to lamb will help compensate for the toughness though, especially when cooked slowly with a longer roast or stew.

Hogget is all but impossible to find in supermarkets, but can be sourced from specialist lamb providers and may be ordered from good local butchers.
