Hugh Fearnley-Whittingstall is probably best known for his River Cottage series of TV programmes and books, where he documents his experiences of taking on and running a smallholding in Dorset.

His willingness to eat almost any part of almost any animal has earned him a popular reputation as an unreconstructed meat-guzzler, but his adventurous eating has its roots in the idea of paying proper tribute to the animal you're consuming by minimising any waste.

This idea is part of a wider philosophy of proper livestock husbandry and crop farming, coupled with an appreciation of seasonal and local produce, and a mission to reconnect the UK public with the origins and nature of the food we're consuming.
