The French for 'juice', but has a more specific culinary meaning
Literally translated from the French, jus means simply juice. In cooking, however, it has a slightly more specific meaning, referring to either the natural juices released from meat or poultry during the cooking process, or the juices squeezed from an uncooked fruit or vegetable.
In practical terms, a jus is usually a sauce made from the cooking juices, reduced and flavoured with wine, stock, herbs, or a combination.
