Mirepoix



French term for a mixture of chopped vegetables

A mirepoix is a mixture of chopped vegetables which is used as the basis for many stocks and stews.

Classically, it consists of onion, carrot and celery in the ratio of 50% onion and 25% each of the other two, but the term's use has expanded to include more or less any combination of chopped vegetables. Ham and bacon are also sometimes added for extra flavour.

Mirepoix can be sautéed in butter as a dish in its own right, and is also widely used as a base to rest meat on when roasting or braising, resulting in a richly flavoured gravy or sauce.
