Slow-cooked dish of veal shanks
Osso Buco is a traditional veal dish from Italy. The name means 'hollow bone', and comes from the cut of meat used. The shin of veal is cut across into slices, leaving the marrowbone in place. It's this bone that gives a much prized taste and texture to the dish.
The veal is slow cooked in vegetables and stock until tender, and then served - Milanese style - with gremolata (a chopped mixture of lemon zest, garlic and parsley).
