Sachertorte



A luxurious chocolate cake named for Hotel Sacher in Vienna, Austria

Sachertorte is a luxurious chocolate cake originally invented in 1832 by Franz Sacher of the Sacher Hotel in Vienna, Austria. The recipe is a closely guarded secret, but it basically consists of a rich chocolate sponge with chocolate covering and a layer of apricot jam.

There was a long running dispute between Hotel Sacher and a Viennese coffee shop, Demel, over who had the right to use the term 'orginal sachertorte'. The matter was settled in 1965 since when the version sold in Demel has been known as "Demel's Sachertorte".

The main difference between the two recipes is that in Sacher's case, the layer of jam is between two layers of the chocolate sponge, while in Demel's version the jam is on top of the sponge but under the chocolate covering.

Both Demel and Hotel Sacher are popular destinations for chocolate-loving visitors to Vienna, as well as being central features of Viennese cafe culture.
