Smetana

A soured cream from Russia and Eastern Europe

Smetana is a soured cream originally from Russian and Eastern Europe.

It is added to a wide range of foods in as a sauce, garnish or ingredient, but is especially associated with bliny (pancakes) and pelmeni (dumplings).

As it is not easy to find in the UK, crème fraiche or traditional soured cream can be substituted.
