Rainbow, Brown and Sea
Trout is a family of fish that belongs to the wider family of salmon. The most common varieties are rainbow trout, sea trout, and brown trout.
Rainbow trout is widely farmed in Britain, and so is easily available in fishmongers and supermarkets. Brown trout is native to the UK and Europe but is rarely farmed, and so is much less easy to find unless you are on good terms with a fly-fishing enthusiast.
Rainbow and brown trout are both freshwater fish, while sea trout is found in the inshore waters of northern Europe. There is also a variety of rainbow trout called the Steelhead, which spends most of its time in saltwater but returns to fresh waters to spawn.
