Wiener Schnitzel

Classic Austrian way with veal, pork or chicken

Wiener Schnitzel is a classic of Austrian cooking, and can be found throughout the country in both restaurants and home kitchens.

Although traditionally made with veal, pork or even chicken can also be used to similar effect.

The basic idea is to flatten the (lean) meat out with a meat hammer, heavily season it, coat in breadcrumbs and then shallow fry until golden and crispy.

It's usually served with lemon wedges, plus chips/fries or potato salad.
